Chewy Vegan Granola Bars Recipe

These chewy granola bars are perfect when you need a quick boost of energy.

It’s so quick and easy to make, refined sugar free, full of wholesome ingredients and healthy fats.

A great plant-based snack, or even as a healthy breakfast on the go!

Equipment

  • Food Processor
  • Baking Tin

Ingredients

  • 80 grams Almonds
  • 20 grams Coconut Oil
  • 10 grams Chia Seeds
  • 10 grams Poppy Seeds
  • 60 grams Almond Butter
  • 50 grams Unsweetened applesauce
  • 50 grams Dried Apple
  • 130 grams Granola
  • 30 grams Cashews
  • 20 grams Dried cranberries
  • Pinch of sea salt
  • 1 teaspoon Vanilla extract

Instructions

  1. Blend the nuts into smaller pieces
  2. Add everything else into the blender and pulse until a dough starts to form
  3. Place the dough mixture into the lined tin and press down evenly
  4. Freeze for at least 2 hours
  5. Cut into bars or bite sized squares
  6. Keep in an airtight container

How To Store Your Own Granola Bars

The best way to store this great snack is in the freezer in an airtight container. They become quite sticky if left out at room temperature, or in the fridge so they are best kept in the freezer.

Plus, this way it means your granola bars will stay good for longer.

These bars will last for around 3 months in the freezer.

Recipe Notes

These bars are very sticky so if you wanted to make them more like crunchy granola bars, simply add more granola, and less of the liquid sweetener.

If you love peanut butter, instead of the almond butter, swap this out for peanut butter instead to make peanut butter granola bars.

Of course, you could also use cashew butter or sunflower seed butter instead if you’d prefer not to use almond or peanut butter.
