This dairy-free yogurt bark recipe makes for the perfect nutritious breakfast, healthy snack, or even as a low calorie dessert option.
Filled with fresh fruit and drizzled with your favourite nut butter, this recipe is simple to make and tastes delicious!
Ingredients
- 300 mls Dairy Free Yogurt
- 150 Grams Fresh Strawberries
- 30 Grams Nut Butter
- 20 Grams Soya Protein Crispies (You can use rice crispies or cocoa pops instead)
- 40 mls Syrup – Pure Maple Syrup, Rice Syrup, Agave or Coconut Nectar
- 1 Teaspoon Vanilla Extract
Instructions
- Start by lining a rimmed baking sheet with parchment paper and lightly oil the paper. Then set aside while you make the healthy treat.
- Wash all of your strawberries and place into a blender with x2 tablespoons of water and bend until smooth.
- In a medium bowl, mix in your yogurt, half of the strawberry mixture, your sweetener, and vanilla extract. Mix well to ensure everything has been incorporated into the yogurt mixture.
- When you’re happy with the consistency, pour out your yogurt into your prepared baking sheet, making sure it’s as even as possible.
- Then start by adding on your toppings. Drizzle on the rest of the strawberry mixture (to make this look more arty, use something small like a tooth pick to swirl the strawberry sauce around). Then add on your crispies and finally drizzle with the nut butter.
- When you are happy with all of your toppings, simply place the yogurt bark in the freezer until it has set this will usually take about 2-3 hours.
- Once set, cut your healthy yogurt bark into smaller, bite size pieces and serve while still frozen.
Notes
The best way to store leftovers of this type of yogurt is in an airtight container, or in a freezer-safe container. It will store well for up to 3 months.
