Chocolate Covered Lemon Protein Balls

These Chocolate Covered Lemon & Poppyseed Protein Balls are actually a revised recipe I got from the Little Cooks Co. I’ve made countless protein ball recipes over the years but nothing quite like this one. I’ve never used a lemon and poppyseed combo or covered them in chocolate before. However, I’m so glad I did as they are the tastiest ones yet! Whether you’re a master in the kitchen or you don’t know what a toaster is, you will be able to make these with no problem!

Ingredients

  • 1 Lemon – juice & zest
  • 1 Teaspoon Vanilla Essence
  • 120g Extra Soft Dates
  • 80g Coconut Flour
  • 50g Cashew Nuts
  • 50g Walnuts
  • 20g Chia seeds
  • 1 Scoop Vanilla Protein Powder (any will do)
  • Bar of Dark Chocolate
  • 1 Tablespoon Coconut Oil
  • 1 Teaspoon Salt

Method

  1. Place the dates in a bowl of hot water and leave to soak for 5 minutes to soften them.
  2. Place the cashew nuts and walnuts into your blender and mix until they look like a rough powder.
  3. To the nut flour in your blender, add the juice of the lemon.
  4. Strain your dates and add them to the nut flour and lemon juice, along with the chia seeds, coconut flour, protein powder and vanilla essence and blend into it forms a dough-like consistency.
  5. Remove the blade from your blender and take out the dough. Roll the dough into balls (size of your choosing), approximately 20 balls depending on the size but it really doesn’t matter what size they are.
  6. Put the balls into a container and put into the freezer for at least 20 minutes.
  7. While your balls are in the freezer, break up your chocolate bar into a microwaveable bowl and add the coconut oil. Microwave for 30 seconds and stir until all the chocolate has melted.
  8. After the 20 minutes is up, take the balls out of the freezer and one by one, dip the balls into the melted chocolate until it is completely covered. One covered, take out your ball and place on to some baking paper for the chocolate to harden.
  9. Once all the balls are covered and the chocolate is hard, you can put the balls into the fridge until you want to eat one…or two!
